We have not yet bench-tested these products ourselves — this is a specification and documentation comparison, and it says so wherever judgment is involved. Criteria: moisture and oxygen barrier, cost per stored unit, resealability and daily-use ergonomics, durability and light protection, fitness for cottage retail.

Extension guidance names three legitimate homes for freeze-dried food: mylar bags, vacuum-sealed mason jars, and PETE containers — all with oxygen absorbers, all hermetically sealed. They are not interchangeable. Here’s how they compare on the criteria that decide the choice, and which to use for what.

Long-term storage: mylar, with discipline

For sealed-and-forgotten storage, thick metallized mylar wins: an excellent moisture, oxygen, and light barrier at a low per-bag cost. The qualifier is discipline — its performance depends entirely on execution: bags in the 5–7.5 mil range (not thin decorative pouches), absorbers sized around 100 cc per quart (300–500 cc per gallon bag), a clean wrinkle-free seal, and a next-day check that the bag has drawn in slightly. Stored inside bins or buckets (mylar’s one weakness is puncture) below 70 °F and dark, this is the system behind every serious long-term pantry.

Open-and-close pantry use: jars

Glass is a perfect barrier, and jars are the only option here that’s pleasant to open weekly: vacuum-seal, use some, re-vacuum. The costs are light sensitivity (store dark or accept faded, degraded contents), breakage, and shelf-space economics. Jars shine for the crunchy-snack rotation and powdered ingredients; they make little sense for 40 pounds of long-horizon food storage.

PETE: the situational third

Food-grade PETE bottles and jars with absorbers are extension-approved and durable, but their barrier performance sits below mylar and glass, and they’re usually clear. They’re a fine home for bulk staples you’ll cycle through in a year or two, and a poor one for decade-scale storage of anything delicate.

For sellers, the answer is narrower

Cottage retail runs on printed mylar-style pouches — light, cheap to ship to you, attractive on a market table. Two honest caveats. First, many retail candy pouches are thinner than storage-grade mylar; that’s acceptable for product that sells within weeks, but label a realistic best-by window rather than borrowing “25-year” storage claims from thick-mylar practice. Second, your absorber-and-seal discipline is now a customer-experience issue: a stale bag isn’t lost inventory, it’s a lost repeat buyer. Bottom line

Mylar for the deep pantry, jars for the working shelf, PETE for cycled bulk, and retail pouches — honestly dated — for the market table. All four fail the same way: a spent absorber or a wrinkled seal. The container matters less than the closing ritual.
