The cycle says done; the middle of the tray says otherwise. Underdried food is the most common — and most consequential — home freeze-drying failure, because moisture left in a sealed bag ruins texture within weeks and undermines shelf stability entirely. Work through these causes in order.

First: confirm it with the cut test

Take the thickest pieces from the center trays, cut them in half, and inspect the middle. Extension guidance is specific: look for dark, cold, or moist spots. Done pieces snap or crumble at room temperature; anything cool or bendy in the center is wet. If even one piece fails, treat the whole batch as unfinished and return all trays for more dry time — the piece you caught is not the only one.

Cause 1: The load was too thick or too uneven

Water vapor has to escape through the food itself, so drying time scales sharply with piece thickness. Mixed sizes make it worse: the cycle’s sensors see mostly-dry trays while dense chunks stay wet inside. Fix: cut uniformly and thinner, keep loads level and within the machine’s rated weight, and give dense foods (cooked meats, purées, thick fruit slices) their own batch instead of sharing a cycle with quick-drying items.

Cause 2: Not enough dry time for this food, period

Some foods simply need more than the default. High-moisture and dense items sit at the long end of the typical 13–35 hour range, and no setting change substitutes for hours. Fix: add extra dry time in generous increments (2–4 hours), re-run the cut test, and write the final number down — next month’s identical batch shouldn’t require rediscovery. Cause 3: A weak vacuum is slowing sublimation

Underdrying across the whole batch — not just centers — often isn’t about time at all. If the chamber can’t hold a strong vacuum, sublimation slows and the cycle finishes on schedule with wet food. Fix: check the door gasket, drain valve, and hose connections, and run your machine’s vacuum/functional test (commonly, holding below ~500 mTorr indicates a healthy system). Cause 4: Warm, humid intake conditions

Machines in hot garages fight their own environment: longer freezes, slower drying, and moisture creeping into everything. Fix: run in a space below ~80 °F where possible, and in humid climates package finished food immediately — a “dry” batch can re-absorb enough ambient moisture during a slow bagging session to fail later.

If you already sealed it

A bag that turns out soft or chewy days later can be re-dried: return the food to trays and run additional dry time, then re-test and re-package with fresh oxygen absorbers. And a safety note that extension services insist on: freeze-drying does not kill pathogens, so a marginal batch of a low-acid or protein food that sat warm and moist is a discard, not a rescue.
